The word “omakase” comes from “omakase suru (お任せする)” = “leave it up to you”. In omakase dining, the chef decides everything. Ingredients, preparation, and in what order each dish is presented, with intention. Because the menu is fully set, it’s very difficult to adjust the dishes for allergies or dietary restrictions. The heart of omakase is trust. You let your dining experience in the chef hands, 100%. In return, the chef prepares something thoughtful, seasonal, and special.

At Omakase Sakana, you will rarely find the same dishes you see on our regular menu. More than 80% of dishes will be prepared for one omakase event only. Japanese cuisine is all about seasonality. Chances are, you won’t see the same dishes again at future omakase events either. So that surprise factor makes Omakase Sakana fun. You allow the chef full creative freedom. The chef offers you their most considerable work.
